Rozanne Stevens’ Guinness and Cider Spiced Beef

1 joint spiced beef
1 onion, halved
1 carrot, chunked
1 stick celery, chunked
1 bay leaf
Place all the ingredients in a large pot cover with water and bring to the boil. Reduce to a simmer and simmer for 3 hours, topping up with water.
Serve with relish or chutney.
