|1 joint spiced beef|
|1 onion, halved|
|1 carrot, chunked|
|1 stick celery, chunked|
|1 bay leaf|
Place all the ingredients in a large pot cover with water and bring to the boil. Reduce to a simmer and simmer for 3 hours, topping up with water.
Serve with relish or chutney.
