Tim and Jack McCarthy have struck gold in France – quite literally. Their unique creation, a Pistachio and Chocolate Black Pudding, has earned them a Gold Medal from La Confrérie des Chevaliers du Goûte Boudin – the famed Brotherhood of the Knights of the Black Pudding – in 2023.

Based in Mortagne-au-Perche, Normandy, the heartland of black pudding tradition, the Brotherhood was founded in the 1960s to honour and preserve the art of making traditional blood pudding. Today, it is one of the most respected international forums for sausage and charcuterie makers, receiving thousands of entries from across the globe each year.
Only a select few are awarded the coveted gold medal, a recognition of excellence and innovation in the world of black pudding. McCarthy’s bold twist on the classic – combining rich chocolate and roasted pistachios – clearly made a lasting impression.
This isn’t the only adventurous creation to come from the McCarthy kitchen. Other inspired flavours include Irish whiskey cream and apple – proving that when it comes to black pudding, McCarthy’s are proud to push the boundaries while still honouring tradition.
